There are a few options. I like they guy who makes them for the defroster on the side it like clips to that (well replaces it but it still vents) I might go with that when I add more haha

What I did for an oil temp gauge was I used the galley plug to port into, and used the ATI gauge pod that mounts in the drivers side vent. That way it doesn't block any of the stock gauges, or install near an airbag.
