Just do one piece at a time. Find a good header that will remove the torque dip and get a tune with it and keep everything else stock.
And before that you should talk to a local shop and see what the emissions standards are in your state. You won't be able to run catless in every state, and some states cops can pull you over and if they think your exhaust is too loud they are legally allowed to check to see if you removed the cat. |

Mind you, they would have to remove all the clips and bolts attached to the undertray to get a good look at the header
