Good question, not so sure! One thing is you let the dough come up to temp since it's been cold in the fridge. I'd assume it helps reawaken the yeast a bit to help the dough rise once in the oven.

I just Amazon Prime'd a dough banneton (sp.?) to see if it'll help with shaping the next loaf.

For my first time baking a loaf in an electric oven, mine came out surprisingly fine. Like if it had been shaped and proofed correctly, I think it would have come out as expected.

Appearance-wise, the surface is approximately the same as how my previous loaves have come out using a gas oven.

It just sucks as a loaf because I screwed up, lol.

It was a big plate, but the rib was kind of small, but then again the shrimp were aldo huge. It was $20 though and it was a place on Vero Beach so I was happy with the value. It was delicious!

Other than potentially fucking up my new glass top stove, this came out very well and tasty:





It’s Japanese curry stew. Pretty typical prep and ingredients. Added shiitake mushrooms this time.

Browned the pork bits first with the Dutch oven on the stove to get some nice brown fond on the bottom, added some cheap beef stock. Let that come to temp, then mixed in veggies. Then noticed issue with stove top and decided to put the oven on to 300 degrees and slowly finish it that way rather than simmering it on the stove.

I actually only had it with the oven on in there for maybe a half hour, then turned the oven off and left the Dutch ovens top on and the pot inside the hot oven. This way it could safely continue to stay hot and sort of slow cook longer while I was at the pool.

I skipped lunch and then I went to this beer garden.. mistakes were made. I had to pause a few times to power through all this. Thought I was taking some home at one point.
