Already been done, so if you need an example here you go. This is from Long Beach First86 event so it was done before the car was even released in the US.

Actually it would probably fit in the trunk sideways, but would have to measure.

Worse case you have two. I full width solid one that would add rigidity when in place and a canvas one that would roll up and fit in the back.

My '83 Z-28 had a canvas top over the custom conversion Targa, and it worked great for that purpose.
