Subs is the only way to watch anime imo, in the dubs you cant get the full feel of the voice inflections, and the expression/emotion/action icons over their heads.
I have been watching anime for a long time and the thing that tics me off is when you hear them speaking and when you read the subs and you know they flipped the sentence structure around or the translation is off.

I'm another sub watcher. Honestly, I can't remember the last time I missed any visuals because I was "too busy" reading. Now, when two people talk at once and they have the subs at the top and bottom of the screen it can get tricky, but it actually teaches you to read faster. Also, while I don't understand Japanese, it feels like what they're saying makes perfect sense, even though I know if anyone is around they can hear it and are thinking, "What the hell is he watching?" It has taught me minor phrases though.
There are three shows I watch dubbed because I grew up with them that way. They are Dragonball Z, Trigun, and Outlaw Star. I tried DBZ and Outlaw Star in Japanese once and I thought the voice actors for Goku and Gene didn't fit at all haha. Other than that, I agree with what others have said. The Japanese voice actors have so much emotion in what they say and how they say it. You'll never get the hisses, growls, grunts or pain and frustration that you get out of the Japanese from English actors.

Watching sub/dub really depends on the show, but I generally prefer subtitles. Certain shows you really have to watch English dubbed though... For Cowboy Bebop or Daiguard, the English dub is what absolutely makes the show.
Then there are certain shows where subtitled is the only way to go...Birdy the Mighty ovas (English dub is absolutely one of the worst ever done), Patlabor, and You're Under Arrest are the ones that immedately come to mind. Then there are those that can go either way and it doesn't really matter...Ghost in the Shell, Black Lagoon, Ergo Proxy, BECK, and Trigun would be a few such examples.
