My stew was literally done and then since I happen to be on-call this week for work I got a severity-2 page. Had the teeniest of bowl servings. Got to work for 3 hours with my boss to figure out the issue.
It is now 12am. Since I left the Dutch oven with its cover on it stayed pretty warm. So I warmed it up more and started picking at it.
Best stew I’ve ever made. No question.
Even the damn potatoes. I had added them with just about an hour left of cook time and the cover off in the oven. So the potato chunk edges mostly all got a bit crispy while soaking in the stew. So effing good.
Anywho, now waiting for it to cool a bit and then pt in fridge. Then do cleanup and get to sleep.
