My car is fun BECAUSE it's not stock. It's fun knowing that the hundreds of hours I put into the car continue to result in enjoyment. The car is fun stock. The car is fun with better brakes. The car is fun with new tires. The car is fun with 350whp.
Increased power to some people is no different than a set of wheels, or a widebody kit to others. Every modification has risks associated. If you understand the risks and welcome the outcome, who is to say that one variant of modification is any more "fun" than another? I certainly know that I appreciate any modifications people have done if it's something they enjoy
