For winter driving i would suggest getting winter tires, but if you are sure you wont be driving in snow than all-seasons might suffice. If the winter wheels you are considering at 18x8 a 215/40 or a 225/40 will fit just fine on them. For snow though a narrow tire would be better. For offset you can try to stay near the stock offset anywhere from +35-48 is good enough. People will generally get low offsets to push the wheel out to get a flush fitment.
