I am on the borderline of being a wheel whore. I love my JDM wheels and forged wheels. Here is a list of wheels I have owned on my cars:

Volk GT7
Volk TE37
Volk TE37
Forgeline GA3R (JDM wheels just don't seem right on a Z06)
WedsSport TC105N
Advan RGD

I like my wheels light, and generally I like them forged. I decided not to spend the extra money on forged wheels for the BRZ though. For the weight and money it is nearly impossible to beat the Enkei RPF-1s or the WedsSport TC105Ns.

I went with 265/35/18 tires because they don't make any 265/30/18 or 275/30/18 tires. The extra sidewall doesn't bother me though and a slightly taller final drive ratio is not a bad thing with a turbo. It actually corrects some of the speedometer inaccuracy as well.

Those brake upgrades sound fine to me. Just make sure you get a decent higher temp range aftermarket pad and some higher temp fluid and you are good to go to a track day.
