The reason why car head units are heavy and bulky is because of:

1. The cd/dvd unit component which contains the reader motor, loading/unloading mechanisms, etc.. Although some people no longer use the cd on their units, a lot of people still do as music in CD/DVD format still sounds better than MP3 format because of the differences in compression. Same with video.
2. The built in amplification components which are needed to power a minimum of 4 speakers at a level of at least 5 watts RMS each.
3. Cooling components such as heat sinks and fans which are needed because of the offshoot of the amplification process.

If the Ipad was made to have a CD/DVD reader and power 4 speakers without external amplification, it would weight more and just be as bulky as the common touchscreen car head unit and cost a lot more than what it already is.

If you want to make your tablet as your head unit, a lot of people have already done this. The key is the audio output of the tablet is plugged into an amplifier so that it can power the car speakers.
