If you go with a higher profile, you will have a taller diameter and raise the height somewhat of your car.

Stick to the closest diameter to the OEM size and gearing will not change as a result, so yes, 225/40R18 for front and 245/35R18 for rear will get you almost perfect diameter.

Not sure if there is a reason you are running staggered tires, you could run the same tires front and rear if you have the same wheels and offsets. Even a 245/35R18 all around will not rub on stock suspension. This is an ideal tire size for that wheel width, unless you like the stretched look.
