I basically have that plate, flywheel and organic disc and its great, very much oem feel and nvh.
You do want to increase your idle if you go with the flywheel. It's not necessary but with AC on it will idle hunt and sometimes some nvh when the idle dips.
Th problem with the organic discs, besides faster wear is their heat ceiling on operating temps, they can handle bursts of up to 300c/570f but should be at more like 150/300. For harder driving the ceramic option will perform better but will bring a bit of nvh/shudder.
