I don't know what it is, but for me if a car racing game is not realistic for me it really bugs and frustrates me... so the more realistic it is the more fun I have. Ergo, Forza/Grand Turismo bore and frustrate me... nice car models hampered by frustrating game physics.

Richard Burns Rally though = a great time for me, driving for hours and hours at a time with the same car on the same track just knocking out laps. Nothing like a game with proper force feedback, 3 pedals, and physics model to have a great time on the virtual track.
I will say though, that the funnest time I have racing is with
Hydro Thunder Hurricane...
