Use the hood cam and drive with a wheel. As Chad said, when you sit in your car do you put a fake steering wheel in front of you so you can see the fake steering wheel turn as your real wheel turns?
I generally race in third person as well. It's a flat screen, so depth perception and peripheral vision aren't the same for those of us with single displays.
