Many things can go wrong, which is why you can take many steps to mitigate those risks.

Safe speed =/= speed limit in a lot of cases. It's whatever's safe for the driving conditions. I see people barreling 65mph down the freeway in the fog with 10-feet of visibility--that's suicide, speed limit or not. If there's enough gravel to send off into a tree and you don't see it in time to react, chances are you're going to fast irrespective of the posted limit.

A dip in the road upsetting the chassis, or a crest that unloads the rear tires--those are things that can countered--namely, by slowing down. Not trying to be critical, just that most accidents--even if caused by inclement circumstance--can be avoided.
