I'm seeing gauges for sale that cost a small fortune and require sensors to be installed and wired to the oil line for example, but if the Ecu knows all of that already can't we just get something to talk to the Ecu to display stuff instead?

I'm a total nOOb when it comes to gauges and displaying ecu stuff from a car.
Much of this data can be accessed through the OBDII port. There are adaptors available that will let you read and display the data with Android or iOS devices, as well as stand alone readers like Scangauge.

To read some of this info (oil temp) you need to know the right codes (PIDs).

Here's my current setup using a Scangauge II.
