I would just search via google maps or buy a road atlas at a bookstore and find a route that seems interesting.

I believe both feature topography within the map, so you can see differences in elevation and plan on going to those places.

Or you can head to the regional forums and see if there are any roads the locals recommend or would be willing to show you first-hand.
