For extended warranty costs, just think about it: When will you EVER need to fix anything non-wear-and-tear related that will cost you $2,000 or more? Don't let the "possibilty" of something major going wrong scare you, especially with a Car maker that has a proven history of making reliable cars.
First off, if anything major breaks on a new car, it will most likely break within the first few months of ownership.. and that's covered under the standard 3-year warranty. Secondly, by the time your 3-year warranty is expired, I'd bet you'd be able to save
more than $2K on your own to cover any repairs that your car
might need. Third, you're buying a Subaru/Toyota car, so unless it's a lemon (which again, something will go wrong within the first few months), it should be fairly reliable for a long time.. long past any extended warranty you could ever buy for it. Especially if you plan to keep it stock like you said.
You should've check your local bank or credit union before getting the GAP insurance too.. I got my GAP at my credit union for $200 only.

You don't have to get GAP at the dealership.
As for the lojack, that really depends on where you live and park your car. Personally, if my car ever got stolen, I hope the thief totally destroys it so I can get my insurance to re-imburse me for the entire cost of the car
I would recommend you refund/return the extended warranty at least, but it's up to you. Good luck with it and congrats on the car!
