Forza 4 is a huge improvement over Forza 3 in all of those categories. You should try it out before you dismiss it because of the one time you played Forza 3.
#1 - they took data from Pirelli to make the tire modelling better, and now there is simulation steering. It is still not as good as GT5 but it is at least realistic now.
#2 - Just because you are a super pro racing gamer doesn't mean everyone is. The assists are there to make the game fun for more people, and they can be turned off. What's wrong with that?
#3 - Graphics in Forza 4 are at least equal, if not better, than GT5, and you don't have to worry about a "standard" car model being on the track and ruining the whole thing.
