I was thinking of getting the 17x7.0 since that's the perfect fit for our tires. But how can I judge what offset will fit? I know that if you don't get a high enough offset, your wheels may not clear your brakes (or something like that). Would a +35 offset be safe enough?

17x7 or 17x8 will be no big deal for the stock tires. The stock wheels are +48mm offset, so using +35 means the wheels is pushed outwards 13mm. You should have no issues with either 7" or 8" widths. If you go 8" wide, you aren't stuck getting new skinny tires when the stockers wear out.
