Typically you're very lucky to get close to the CBB value on a trade in, even more so on a high demand car.

IMO, they gave you a "fair" offer for a trade in. If you want a truly fair price your only option is to sell privately. The benefits to a trade in are ease and saving the taxes on the value traded in.

Did you ask for clarification on the price? It's very possible that one price was just vehicle price and the other include freight, PDI, etc.

At the end of the day, dealers can be picky with who they sell these cars to since the demand is so high. If they're going to have to fight with you to sell a car, and cut into their profits they'll just cut their losses and wait for the next customer to come in and take your spot.

If you want a good deal on them you'll have to either be really close with the dealership already, or wait until the demand has fallen off and they're sitting on lots unsold for a while (might be waiting a long time for that).
