Don't sweat the offset or non-offset option. If you want your car as quiet as possible, go with offset/offset.
If you don't care much about loudness, go with non-offset. The difference between the two is not BIG. I personally wanted my car as quiet as possible so I went Offset/offset and Helmholtz resonator on the frontpipe.
