In other words, I release my right to evoke California’s Lemon Law. I wish they had told me this tradeoff was required to accept their compensation. Not sure what to do?

Don't do it, at least not right away. Get the offer in writing and tell them you will let them know in 6 months (or a year) once you have had time to test the car some more. The extended warranty is useless for now since the car already has full warranty for 3 years plus more on certain components like the drivetrain.
