I kept the stock tires (Sports Hard I think) using DS3 with steering sensitivity set to max (7 I think). I always use the bumper cam and mixed up my driving order to verify tiny differences. Drove the BRZ first, then 86 to compare with BRZ and noticed it turned easier, then FR-S to compare with 86, then 86 again to confirm it felt more stable than the FR-S, then BRZ to confirm its understeer tendency. I wouldn't pay attention to my difference in track times (I don't run perfect laps and can always improve lol) as much as differences in feel.
And yes, all 3 do understeer more than I'd like. I can break the rear loose with throttle/brake manipulation on all, BRZ being the most difficult and FR-S the easiest.
Perhaps my dialing the steering sensitivy to max made the tiny differences among the trio more apparent.
I noticed differences between the 86 and FR-S once the FR-S came out. A few weeks/months later I read the FR-S is tuned differently compared to its JDM 86 counterpart in the suspension forum which sort of confirmed what I had observed in GT5 (so no placebo effect there). As for the BRZ, the difference is instantly noticeable with my controller setup.
