I have 225/40s on 9.5" wheels also and I've put ALOT of miles on them. It has a secure seal around the bead and I see nothing wrong with this practice as long as it's within reason. I mean, don't try to fit a 205 on a 10.5" wide wheel. 225s on a 9.5" is pretty common, and not rediculous at all.
This is neither here, nor there. Talking about tire stretching could easily derail the OP's thread, and I think his beautiful car deserves to not have that happen.
OP, you said you could go lower on the coils. Could you lower it all the way so we could see exactly how low is possible? It looks like you have the tire clearance.
