Big thank you to @
tomm.brz. He managed to take a look at some data logs and determined it was a bad map sensor that was causing my issue. Replaced it and car hasn't skipped a beat since. Just wanted to post a thanks and also leave this here for anyone running into this issue possibly in the future.
