Go into GT7, and make a big change to 1 setting and see what you notice. ACC is probably better for this but I don't think you have that. The problem is in game you are also dealing with the quirks of a physics engine trying to mimic real life.

For most people, leaving settings at baseline and tuning with sway stiffness is enough, maybe a couple clicks here or there off the baseline damper settings.
