Can you take a picture of the gauge cluster when its reading high?

Don't mean to say that you don't know how to read the cluster but I have the coolant indicator move up and down also in summer. But only a bit and when the AC fan kicks in it goes down.

What's your ambient temp?

That reservoir is an expansion tank and the level will go up when the car is hot and go down when cold.
Some evaporation happens over sometime and you need to top it up occasionally.
