I took car to shop that help build it and going to look at it, but has anyone had this issue? Anything I should worry about? Car is more track car then daily. I drove it 5 weeks recently everyday and assume burned very little oil, but nothing major.

First off, I reckon you're lucky that your car is still running, if you burnt off 5 out of 6 quarts -
Even back in the day, a car couldn't burn that much oil.
I figure something else is wrong with your car. I suggest you take it back to whoever built the engine and have them install the oil rings this time.
OR figure out HOW that much oil is getting from the crankcase to the combustion chambers -
