Just scanning through my fuel log, I've done about 9 trips that were between 500 and 800 miles in one day. I have many more that were between 200 and 400 miles in a day.
I've enjoyed every one of them and wouldn't hesitate to to it again. Some were solo, some were with a passenger.
On solo trips, I only stop for fuel and the occasional rest area. "Meals" are grabbed when getting fuel. So, nearly all the time is spent in the car. With a passenger there is usually at least one, if not two, meal stops of 45 minutes or more.
