FWIW the red mark on the factory gauge is ~250F indicated, halfway between the 230F mark and the max 270F mark.

I've never seen coolant temps rise beyond the ~225F (or whatever it is, could be 230?) indicated at the track, always hits same mark and holds. Honestly if I'm you, if it doesn't try to increase from there for your usage, I wouldn't worry about cooling system mods. If it ever does get to a point where it wants to climb uncontrolled, easy enough to back off and then make mods as required.
I would be definitely concerned about that for extended period of track use , oil temps are somewhat less important but coolant temps above ~220s are not.

that is true, they're designed to run hotter when I was tracking my Camaro SS 1LE (2017 and 2019) it was stabilized at around 260F ..the gen 6 Camaros had the actual reading IIRC .. Corvettes are a bit higher and it runs an algorithm to calculate that as well as the Gen 5 Camaros
