I will most likely upgrade the radiator and/or low temp thermostat as well as a different coolant mixture (30/70 maybe)
IMO 230F coolant *if it holds there* is nothing to worry about.
FWIW the red mark on the factory gauge is ~250F indicated, halfway between the 230F mark and the max 270F mark.

I've never seen coolant temps rise beyond the ~225F (or whatever it is, could be 230?) indicated at the track, always hits same mark and holds. Honestly if I'm you, if it doesn't try to increase from there for your usage, I wouldn't worry about cooling system mods. If it ever does get to a point where it wants to climb uncontrolled, easy enough to back off and then make mods as required.

because there are tons of cars with calculated field/data for oil temps vs actual readings ( most of the Corvettes and Camaros for instance) and it's been ~7 years since the last time I owned/tracked my BRZ so I don't remember
From what I've read about C7 Corvette, gauge reads out a calculated max oil temp based on measured oil temp and other factors (possibly including coolant temp). Warning message (and power cut?) at 320F indicated (i.e. calculated). Seems like I've read that corresponds to ~295F sump? Also C7 gives coolant temp warning at 255F IIRC...

Where is the oil temp sensor located? in the oil pan?
Presumably.
