I'm a vegan, so I whole heartedly agree.

Mining is always going to have an impact, but batteries are going to be a piece in a sustainable future. Batteries will get more green. Batteries will get smaller after they get bigger. Mining will shift to recycling, as costs change, as the industry changes, as production volume stabilizes, etc. Hydrogen will invariably replace large batteries, but it will require a future with an abundance of renewables to make hydrogen realistic, assuming the prospects of large batteries becomes more expensive or becomes unfavorable from an environmental perspective. Regardless, fossil fuels will reach their end long before we run out of fossil fuels, so we need to think beyond this limited resource.
