I'm in on the local mom and pop places. We try to do road trips on "Blue Highways." A few years ago driving up the Natchez Trace Pkwy we stopped at a place in Tupelo called the Traceway café (or restaurant). Really good burgers and really interesting people. Earlier in that trip we were in Alexandria LA and decided to look for crawfish. Didn't find 'em but we stumbled onto a little place called "Pamela's Bayou in a Bowl." It turned out to be a soul food place with great everything. A young guy (8 0r 9) was admiring the BRZ so I let him sit in the drivers seat for a bit. Very cool. You just don't get that at Denny's. Also - a shout out to anybody who knows anyone at "Traceway" or "pamela's."
They're a little up the cost spectrum from I-n-O, 5 dudes, and Whataburger, but Wall Bangers is high on my list followed by a local outfit called Tower Burger.
