Generally dynoing in a lower gear will accentuate the "power" gain of a lighter rotating part (flywheel, pulley). If the dyno run is too short you start to lose resolution (assume a fixed data sampling rate, so less time = less data). On the other hand, if you take too long there might be drift, extra wear and tare on the engine, etc.

Back when I cared about this stuff, we always dynoed in 4th gear because it was 1-1. In the case of the BRZ that would be 5th gear.

I don't know if there is a wrong or better answer. You can't compare numbers that you get in different gears, so just make sure you do it the same way every time.
