Recall seeing video on test of performance of different year tires.
Main point was - properly stored tires degrade very little, way less then customers often think of (which on the other hand sometimes may result in nice deals on "old" ones). It's actual use on car, that "starts clock ticking" for tires, when they see many heatup/cooloff cycles, where they slightly deform per every wheel rotation, where tires see various ambient factors like snow/ice/low temps/road chemicals/summer heat/rain/direct sunlight.
That excludes though case if some tire manufacturer keeps doing some improvements every year for some popular tire model without changing it's name.
But in general, i'd think "tire manufacturing date" of eg. 3 years old rather as means to haggle price, as tire shop workers also might be guiding themselves by popular myths and wish to clean "old inventory", while i usually don't use tires more then 3 seasons (even if tire still has "legal" thread depth left).
