What are you monitoring through your standalone?
Are you asking about sensors, or gauges that display data from sensors?
What use are you driving the car under (track, daily, weekend warrior, etc)?

Oil pressure is your engine's lifeline.
Fuel pressure is also a lifeline
What can you monitor and react to fast enough where you're actually avoiding damage? I would focus on letting the ECU monitor and building fail-safes that react faster than you.

Oil pressure is good to watch on a gauge. Most everything else can be managed by your ECU unless you like watching
