Have you considered intentionally limiting yourself to the Stock class for now? Or at least the Street class?
"As best as it can" will probably require higher grip tires, but that might be counter-productive for a beginner (I don't know your experience level).
Their Street class is very competitive and my experience with them has been very positive.
Don't know about other tires, but GT Radial SX2 245/40R17 will rub
at least in one place no matter what you do. It's not too big of a deal.
But if you want to minimize that I'd recommend et35 over et42, and plenty of camber in the front (again, -3º and even more front camber will only add grip).
