You can sear the shit out of a hunk of meat but only the pan gets hot.
edit: With respect to cast iron, I use only those with well-formed flat bottoms. I don't use the ones that have decorative patterns and/or rings around the bottoms to raise the center. The electromagnetic couple follows the inverse square law so a slightly raised, or distorted base will reflect energy back to the output section the same way using a small pan on the big burner does.
