Tcoat here and say two things. First, sales were not "low" in the sense Toyota and Subaru sold every one they intended to sale. There's not like there is a parking lot full of unsold FRS/BRZ/86 with some Marketing Guy standing there scratching his head trying to figure out what went wrong.
By that same token, I doubt there will be any surprises in GEN2 sales. It will be exactly as GEN1. It will start off high, then decline over subsequent years. Pretty much like every model, except maybe the high volume ones.
Sure, every once in a blue moon the demand for a new car outstrips availability, but it's even rarer that the manufacturer spins up more capacity in the short term to meet that. Maybe, they run a third shift, or a weekend shift to produce a few cars more quickly but that's about it.
I suspect if there is a GEN3 in 8 years, it will be a different type of car, as you say. most likely an EV, slightly less likely a hybrid. Either way, I think there is likely to be a facelift mid-model (year 4) unless the plan is to drop he car entirely by then
