Driving is an art. You get into things like auto blip, nannies, etc and you end up with a paint by numbers mentality. There's nothing wrong with paddles if you're just out for lap times and have mastered H pattern and heel toe. It's like starting out on the track with a low hp car. You end up being a better driver in the long run when you have to master the fundamentals of why cars do what they do.
I will say though when you get into supercar territory then paddles and nannies are necessary to just keep the car on the track for most mortals. I remember when Walter Rohrl was finished testing the first 911 GT2 he said "You don't plan on selling these to the general public now do you?"
