I'm with you on cutting back sugar. It's alarming how much sugar or equivalent is in most off the shelf products.
The two things I gave up making when considering cost of ingredients, prep time, and final flavor profile is sauces and marinades. I wait for Mezzetta sales!
The only meat I can reliably cook by sight and touch is fish filets. For everything else I trust a good instant read thermometer.
