I believe part of that is the R&D that goes into the Corvette makes it's way into a much larger portion of GM's product line, offsetting the cost. The Camaro, Cadillacs (V series anyone) at minimum benefit from the experience. I'm sure cars further down the line do as well.

Ferrari has create tech, but they sold less that 10,000 cars across all models in 2018. Chevy sells 3 times that many Corvettes alone, then look at the Caddy and Camaro sells. Pretty easy to be cheaper.

Going mid-engine added marginal cost to the production run of the car.
