Actually, for science, try this. while you're idling or in a situation where the compressor is cycling on and off quickly, crank up the cabin fan all the way. You'll notice that it starts running continuously. What's happening?
There's a thermostat in the system that controls how cold the evaporator is allowed to get. It will easily freeze f there's not enough hot air being pushed through it. The thermostat says "ok, that's enough. Gimme a sec." and the compressor shuts off.
That's what you notice. Normal and more importantly, healthy operation. If you didn't have enough refrigerant, or if something was wrong with the compressor, it would never cycle. Now, if it cycles and doesn't blow cold, that's a different story. That is an unlikely failure mode but it can happen.
