OK,,, old man's (60 yo) opinion now. I'm on my 6th Vette,,, first one at 18. Two C3's, two C4's, a C6 and now a C7. The notion they're only driven by old men has some truth,, new ones are pretty expensive which rules out some younger folks. That said,, I expect one like the OP's a low mile C5 Z06 could be had for what a new FRS goes for. Which means just about anyone could drive one if they wanted.
As for which one to drive. No question for me. The Z06. I love my FRS (although haven't driven it in a while) but there is no comparison. Also something else to keep mind. With 100K on the clock on both,, which is worth more??
Other point the power or lack there of in the FRS. I've put almost 60K on my FRS. Love the car,, dislike the power,, hence the swap I'm doing. I'm not going crazy 325-350HP which will be a good power to weight for the chassis. If you're going to start modding it to get more power,, it doesn't make financial sense
Lastly,,, got out of a C6 that I put 110K on and got into the FRS. I wanted and needed an inexpensive commuter car. The HP in my LS2 was the same as your LS6. Huge difference with the FA20.
Keep the Z06.
