I'm not so concerned with specific numbers, more just want a "peppier" engine, great handling (which it already has) and attractive aesthetics.

I know that numbers directly correlate to "feel". I would imagine a 15% increase in torque through the 4-6k range, would give me enough of an improved "feel" to satisfy me.
That's a good list and should get you to where you want to be. FYI to keep sound levels decent, go with a good header but keep your stock catted FP and see how the sound is. Then upgrade from there if you feel you can go louder. Full catless exhaust will be loud.
