I notice you only list COTA in Texas. Here in Texas we have Harris Hill Road (H2R), MSR Cresson, MSR Houston, Eagles Canyon Raceway (ECR), and Driveway Austin in addition to COTA.
I'm not personally fast enough to post any of my times at H2R, which is my home track, but as far as I'm aware the two fastest times posted on this platform N/A were done by Napoleon Casso and Robert Fuller (Robispec). Robispec is on the board in the clubhouse at the track with a 1:28.87 (IIRC), and here's the thread for Napoleon Casso setting a 1:27.12 during an officially timed event:
