You can use them to do things like calculate downforce, measure body roll, tell you if you're bottoming out the suspension, if they sample fast enough they can help you make damper adjustments, etc. Could probably even derive things like cg and roll center heights.

I'm not sure what you'd get from putting them on a car with stock suspension. It has some sort of a data aq system but stock struts and springs? I suppose it would give you a baseline before changing things.

But if you're going to be adding these, you can't take the wheels off and stick a measuring tape on a few things to decide what to get and where to put them?
