$5k (OP is comparing $20k used cars to $25k newer/higher spec cars) buys 4 sets of brake pads and ~16 track days, ($250 per track day, $500 for pads+fluid for 4x track days) so if OP owns the car for five years and does 3 track days per year then sells the car he comes out well ahead by my math, you still need to buy track pads for the PP brakes, the rest of the differences are negligible to meaningful performance for amateur drivers IMHO.
Seat time and instruction and practice are more valuable than the shiny bits.
