just went for a track day last weekend in Michigan (grattan raceway), my car has jackson racing dual oil cooler and supercharger, jr factory tune.
outside temp was about 65 degree, 20 mins session. oil temp max out 248F, most of the time stay at around 235F, water temp stay at 212F for the whole seesion. oil and water temp was read via OBD II.
